2 oz Brut sparkling wine
1.25 oz St George Bruto Americano @stgeorgespirits
0.5 oz Don Ciccio Fennel Liqueur @donciccioefigli
1 tsp Giffard Pamplemousse @giffardusa
1 oz seltzer
Garnish: grapefruit and fennel
Fennel Liqueur is from Washington DC, and the family behind the brand was from Italy Almalfi Coast. They have been making various amari and limoncello since 1883, then an earthquake destroyed everything in 1980 which prompted their move to the United States. I feel pretty lucky we get such authentic original spirits from Italy, the fennel liqueur is really one of its kinds.
The second thing that is worth mentioning: I finally built a carbonation rig based on Jeff Morgen’s @jeffmorgen article. The entire rig costs me 150 dollars, but it is going to last me a very long time.
I wanted to make a "ready to drink" carbonated version of this so that I can bottle them and drink whenever I want a spritz. I repeated the carbonation process three times, with 2 hours between each, during which time they were chilled in the frig so that the bubbles are more fully resolved into the cocktail. However, it was not entirely clear how much water you should dilute the cocktail when it comes to spritz. I added 45% water before the dilution, this seems high, but it tasted about right. Some of the bitterness from Bruto American was gone, so there is a slight change of the flavor. It is quite addictive when you have homemade spritz that is ready to drink at any time!
