VEGAN Mug Cake!😋TAG someone who should do THIS for YOU!🌱 ➖ 👉 Here is a quick and easy MUG CAKE RECIPE for you! Vegan DESSERT for the go, if you want so... 😂🤷‍♂️ ➖ 👉 Ingredients you'll need: 2 TBLSP. Oat Flour, 3 TBLSP. Cacao powder, 25g dark chocolate chips, 2 TBLSP. Maple syrup, 1 TBLSP. Peanut butter, 3 TBLSP. Oat milk, 1/4 TBLSP. Baking powder, optional to add is 1 TBLSP. vanilla extract ➖ 🔥HOW TO: Simply mix all the ingredients together in a mug except the dark chocolate chips, stir well and put in the microwave for a few minutes until cooked! Tex Mex Empanadas 🥟🥟🥟 Hey 👋 Happy Friday Everybody!!Made some empanadas which use walnut as the base for its meaty filling, combined with some flavorful black beans & corn all tucked in a whole wheat shell. Enjoy & Happy Friday! 🙃🙃🙃Here’s the recipe: what you need: Crust: 2 1/2 cups whole wheat flour, 1/2 tsp salt, 1/4 cup refined coconut oil, 1/2-1 cup warm water filling: 2 cups raw walnut halves, 2 tbl taco seasoning, 2 tbl red wine vinegar, 1 tbl tamari, 1 cup thawed frozen corn, 1 cup black beans from can drained/rinsed, 1 tbl vegan Worcestershire sauce, 1/4 cup chopped cilantro What you do: 1️⃣In a food processor, Combine flour & salt, add coconut oil, keep pulsing, scraping down sides to combine, slowly add water 1 tbl at a time, process on high, when combined it will form a ball & feel smooth. Cut dough in 4 equal pieces, wrap in a kitchen towel, let rest 30min 2️⃣ Using your food processor again, pulse walnuts till crumbly & looks meaty with 1tbl taco seasoning,1 tbl red wine vinegar, 1/2 tbl tamari, 1/2 tsp salt, black pepper to taste 3️⃣In large sauté pan, over med/high heat, heat neutral oil, , add corn, black beans, the rest of seasoning/ vinegar, salt/pepper to taste, mix until heated through 4️⃣ Add walnut meat to pan, mix, add Worcestershire sauce. Season with salt pepper to taste. Let Cool. 5️⃣ On a floured dusted surface roll out one piece of the sectioned dough, use a 6 in circular cutter to make empanada crust (I used a bowl as my template), place 1/4 cup packed filling & some cilantro, on 1/2 of the dough leaving a boarder, dab boarder with water on edges of half the circle, fold into a half moon, use tines of fork to seal firmly, repeat until you use all dough, place on parchment paper. Repeat. You should get 2 empanadas from each piece of dough. Making a total of 8. 6️⃣ Mist parchment with oil bake empanadas at 400 F 20-25 flipping half way through misting tops with oil. Serve with all your favorite taco toppings- quac, salsa & sour cream. Enjoy!!!

Sunday mornings 😌✨ Recipe below 👇🏼 Walking my way through the brisk but sunny mornings in Berlin must be one of my favorite things to do. When most of the city is still asleep, it’s a little quieter and less crowded than usual, the sun is reflecting herself in the water and you’re able to let your thoughts run free. I haven’t been able to catch a lot of these moments lately and now that I do, I noticed how much I missed it. I am forever grateful for these moments of stillness. We all need to slow down, pause and breathe. ✨ When was the last time that you actually did nothing? When was the last time you enjoyed spending time solely by yourself? For me, it’s been a while and I know I need to prioritize myself again. And i started today. So I would love t encourage you to do the same, whatever it is that will help you slow down - give yourself time to do just that. You deserve this 💕✨ I’m excited to come back home and enjoy a big bowl of HOMEMADE MUESLI this Sunday! I make my own by mixing oats, homemade granola, chestnut flakes and cacao nibs! I either serve it just like that with fruit and milk or sprinkle it on top of smoothie bowls or even porridge 😅😋 Oh the possibilities! Would you be i retested in the granola recipe. Anzeige Happy Sunday😊! (english below🇬🇧) Ich schwebe seit einer Woche im siebten Dattelhimmel, weil ich ein wunderschönes Paket von @dattelbaer.at  bekommen habe😍 - randvoll gefüllt mit lauter Dattel-Köstlichkeiten😋! Alles bio und ganz natürlich ohne irgendwelche Zusatzstoffe🙌🙌! Da musste ich natürlich gleich etwas ausprobieren und habe mich wieder mal für eine neue Granola-Sorte entschieden😋😋. Dieses Mal für Erdnuss-Orange-Dattel😍. Alles was ihr dafür braucht sind ▪️150 Gramm Haferflocken, ▪️1 TL Zimt, ▪️1/2 TL gemahlene Orangenschale, ▪️2-3 EL Dattelsirup von @dattelbaer.at  , ▪️1 EL Erdnussmus und ▪️etwa 30 ml Wasser. Alles gut durchmischen, damit eine krümelige leicht klebrige Masse entsteht. Die Mischung auf ein Backblech verteilen und bei 175 Grad Ober-und Unterhitze etwa 15-20 Minuten backen. Dabei regelmäßig wenden, damit das Granola von allen Seiten schön knusprig wird. Anschließend vollständig auskühlen lassen und nach Belieben mit kleingeschnittenen Datteln von @dattelbaer.at  , gehackten Nüssen oder gehackter Schokolade mischen😋😋. ---------------------------------------------------------------------------------- What’s your favourite granola😋? Choc banana minis✨ A couple of weeks ago I experimented with a bunch of recipes to try and make a chocolate banana bread cookie and it finally worked! This is the perfect mini snack when your craving a little chocolatey goodness. They aren’t too sweet so if you have a sweet tooth, you’ll definitely want to add more liquid sweetener! • • - 2 soft bananas - 1 1/2 cups of shredded coconut / coconut flour - 4 tablespoons of any liquid sweetener - 4 tablespoons of peanut butter - 3 table spoons of cocoa powder ⠀⠀ Preheat oven to 170°C. Mix all ingredients together in a bowl until well combined. Prepare a tray with baking sheet. Roll the batter into small balls and flatten them into desired shape. Place the cookies on the tray and bake for 10 - 15 minutes. Sunday Mornings.. do you spend a little extra time making something you would eat for breakfast during the week? We often do as breakfast always seems to be late and leisurely in our kitchen and often hurried during the week. This morning we’ve made some potato waffles. Grate some Vintage cheddar or vegan cheese to keep it vegan, then grate a couple of peeled potatoes, which you just squeeze the excess moisture out of. Add, Plenty of cracked black pepper, Himalayan salt, chopped fresh chives and a generous punch of dried chilli flakes. Incorporate the mixture together and pile into the waffle iron to cook for 15-20 minutes. Once cooked, remove gently, and pile with your favourite toppings. This one here has smoked salmon with a horseradish creme fraiche dressing , sliced avocado, oven toasted cherry tomatoes, a twist of lime and more chilli flakes to finish. 💚 Wishing everyone a beautiful Sunday 💕

I think I have finally mastered the homemade Gnocchi 👉🏼 using golden Kumara 👅 This time served w/ homemade pesto & alongside a wee cheeky steak because treat yourself 🤩 - Tips: For 1 Cup of Kumara mash, is use 1/3 cup of Tapioca flour! Mix well, until it forms a dough consistency. Then roll around 1/2 Tbsp of the dough into small balls, poking with a fork to flatten out. Cooking: In a pot of boiling water, pop in the Gnocchi 6 at a time & cook until they rise to the top! Then fry them in a medium heat oiled pan for 2 minutes until they get golden & slightly crispy 👀

Homemade beetroot hummus 😋 I love making things on a Sunday for healthy snacks throughout the week. Last week I also baked some sweet potato and lentils for lunch which lasted pretty much the whole week last week. I find it so much easier to make healthy choices when the food is already prepped and ready to go. It’s almost too pretty to eat! Almost.

Purple asparagus planted from seed 3 years ago are sending up gorgeous fat stems for the first time. Last year the stems were more blue purple, but now these delicious ruby stalks are pushing through. I'll harvest all the thick stems for 2 weeks and then let the plant use the remaining stems to concentrate on making bigger roots for higher yields next year. Last year I discovered that the same principle needs to be applied to new rhubarb plants and this spring's new rhubarb stems are wonderfully red too. (also year 3) Gardening is investing in the future. The fruit tree you plant may take up to 10 years to produce! That's ok! Lunch yesterday spicy cauliflower tacos at Market Square in Folkestone. Every time I eat in there it’s been better and better, but I don’t think anything could top these tacos, they were amazing 😍 spiced, perfectly caramelised, crunchy sticky cauliflower florets with chickpeas, edamame beans, peppers, salad, pea shoots and signature green sauce (I’m sure there was more but I just couldn’t put it down to look). Just amazing 😍

There was a time, when grumbles & moans would happen when I gave my kiddies fruit for pudding.😏 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Now, we have squeals of delight!🤗 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ How? I hear you ask!🤷🏼‍♀️ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Firstly, persistence on my behalf but, more than anything we have grown as a family & developed along the way & so have our gut microbes too!🦠 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ The more good things you feed you gut the more it’ll want the good stuff & unfortunately, the more you feed it the wrong stuff, the more it’ll want that too! It’s a simple pattern.🔄 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ It’s not about cutting out things completely, it’s about tipping the balance more one way than the other & being mindful about ADDING & not focusing on the ‘can’t haves’. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ One example of how we have developed & why there are squeals of delight is the piece of fruit I used to present the little ones with was exactly that, JUST a piece of fruit! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Now look! They get colour, they get different textures & flavours and they get some large dark chocolate covered walnuts too! Yum! Mid September and there is still an abundance of tomatoes. This is my first glut of anything for quite a few years. Actually that's a lie. Beans! There's always bloody beans 😂 . It's been an incredible year for me and tomatoes. I'm feeling the privilege of the polytunnel right now and I'm sure that feeling will continue if I get the crop of overwinter salads I'm hoping for too. . Back to the latest trug load of tomatoes (yes, there's still much more to come!) We still have fresh ones left in the fridge from the previous haul and so I'm going to roast the lot and turn them into sauce and perhaps more ketchup. It's delicious. . I'm starting to think about choices for tomatoes for next year. With the space and benefit of the polytunnel, I'm going to expand the selection. There's just so many amazing tomatoes to grow. . I’m always working on healing my delicate gut so today I made miso. I used a recipe from Minimalist Baker - https://minimalistbaker.com/15-minute-miso-soup-with-greens-and-tofu/ I left out the onion and used kale instead of chard. Seriously the best, most comforting, good for you breakfast ever! 🥜🍓🍌🥄 •1 cup vanilla almond milk and •1 cup water Boil and add in •1 cup Bob’s Red Mill organic rolled oats Reduce heat and simmer for 10 minutes, stirring regularly and adding in •A splash of vanilla •A few shakes of cinnamon, and •Peanut butter (with just peanuts) when it’s almost done. EATON PARK 🏛 Today I had a lovely spot of lunch at @eatonparkcafe.  😀 Their special, Vegetable Curry with flatbread (Vegan & GF) was ideal for a nice impromptu lunch in the sun, with a beautiful little Latte too! 👌 I believe Eaton Park Café is owned by the same people as @thebicycleshopnorwich.  The food, drinks and service were spot on today, at a busy lunchtime too!
