well team, football season is upon us!!! & in honor of the second greatest time of the year (after christmas, duh) I’m coming at you with a mini series of recipes for all your tailgating needs 🏈‼️ though these won’t be the heaaalthiest recipes you’ve ever seen me create, they are super delish & relatively easy so YOU can get to watching the game👌🏼😉 but first - pick one: college or professional football??? if you ask me, college is where it’s at 👏🏼
alright, up first we have...
MINI TACO CUPS 🏈
what you’ll need:
•small sized corn tortillas (I used @traderjoes brand because they have pretty solid ingredients 👍🏼)
•organic ground chicken (1 lb)
•organic black beans
•green chilies (canned)
•taco seasoning - check the ingredients for no sugar/other junk!!
•organic mexican cheese blend
•toppings!! we picked tomatoes, chopped onion, salsa, & hot sauce - but you can really top with whatever you like!
how to make them
•spray muffin tin with avo oil and preheat oven to 400 degrees
•put corn tortillas in the microwave for a min with a wet paper towel so they become less stiff
•place corn tortillas into muffin tins - we are really shooting for imperfection here. I used my @calphalon non-stick muffin pan which worked absolutely perfect for these lil guys 👌🏼
•par-bake the corn tortillas for 8-10 minutes, until tortillas become slightly golden on top
•cook up ground chicken and add green chilies, seasoning and black beans. add 1/4 cup of water and simmer.
•place a sprinkle of cheese in bottom of tortilla cup, then scoop in chicken mixture and top with a little more cheese
•bake for 10 minutes, broil on high for 2 minutes until tops turn crispy and golden brown.
