I don't cook complicated food, never did.
I remember when I moved out of the family nest, I had absolutely no idea how to put a meal together. I used to call my mom almost everyday asking how to use spices, how to make rice, what dressing to use, how long to boil potatoes, etc. My go to spice was dry parsley. I would sprinkle it everywhere and thought I was a chef! 😂
With time and experiment (lots of them, lots of bad ones too), I've developped healthy, flavorful and nutritious meals. However, the one thing that remains is how simple they are. .
My point is, we often think cooking has to take time and be elaborate, for it to be good and healthy. This can't be further from the truth. This meal took 30 minutes to put together. Here's how:
- Put salmon, cherry tomatoes & asparagus on a parchment paper covered pan. Add olive oil, pepper and garlic salt. Put in the oven for 20 minutes @ 425°F.
- Bring 2 cups of water to a boil. Add in 1 cup of dry quinoa. Stir and bring back to a boil (it akes about 10 seconds). Cover and simmer for 20 minutes. Once cook, add 1 tsp of coconut oil and a bit of salt for flavor.
