Super “productive” day off yesterday. (Although I don’t like the use of this word - the most productive thing you can do is listening to yourselves: if you have the energy, do things, if you feel tired, make time to rest up, it should be simple despite living in this crazy society that always wants more and more). Exercising, helping a friend try go into labour, tidying, planning, painting, building garden stuff, food shopping and cooking a great meal (husband approved).
The future (or we should say PRESENT) for our planet and health is undeniably vegetarian (meaning no animals) /ideally vegan. Not here to be and never been the patronising type of person but this is a fact!
Try this plant-based and complete dish (protein, iron, fibre, nutrients rich):
A red wine quinoa tower (fry half a red onion, 2 garlic cloves and add 100g quinoa, half a vegetable stock cube, 1 cup of water and 1 cup of red wine, 1 tsp rosemary, all in a large pan) on wilted spinach (fry some spinach leaves in olive oil + garlic, with salt and peppa), fried potatoes (not going to tell you how to cook then fry a potato), sliced ripe avocado, roasted tomatoes and pine nuts.
A tahini sauce on top and it is even better. 😋
