😍💚 Sichuan spicy wontons in Sichuan garlic chili oil! 📷 by @nm_meiyee  💚💚Sichuan chilli oil recipe: 1 1/2 cups vegetable oil 5 cloves, minced 2 star anise 1 cinnamon stick 3 tbsp Sichuan peppercorns 3/4 cup red chilli flakes 2 tsp salt Heat the oil, star anise, cinnamon stick, peppercorns in a small saucepan over medium high until oil starts to bubble slightly turn the heat down to medium or low heat. Let it cook for 10 minutes, the seeds and pods should be darker in colour. In a separate heat-proof bowl, add the red pepper flakes, garlic and salt. Remove the aromatics from the oil then pour the oil over the red chilli flakes, and stir well. Allow to cool completely. . *Chilli oil (to serve) 1/4 cup tamari soy sauce 6 tbsp homemade Sichuan chilli oil Combine all ingredients and mix well. . *Wonton wrappers 2 cups organic white flour 1 cup boiling water Pinch of salt In a stand mixer, add all ingredients and mix until you have a rough ball shape. Dust your work surface, knead dough until smooth. Let dough rest for 20 mins. Lightly dust your counter-top, roll out the dough to your desired thickness, aiming for a rectangle roughly 20”x10” then cut into small squares. . *Filling 1 block of firm tofu, drained & crumbled 250g mushrooms, diced 200g pak choy, julienned 1 tbsp minced ginger 2-3 tbsp Sichuan chilli oil 2-3 clove minced garlic 1 tbsp sesame oil Salt and pepper . In a large skillet over medium high heat, add sesame oil and cook ginger, garlic until fragrant. Add mushrooms and cook until the liquid released. Add tofu, pak choy stir-fry for another 2-3 mins. Then add the Sichuan chilli and mix well. . To make the wontons, take a wrapper, add the filling. Wrap and firmly steal. . Bring a large pot of water to a boil. Add wontons and cook until they are completely cooked through. Drain wontons and transfer to a serving platter. Panda Cake 🐼🎋 Yay or Nay? ✨

Today marks 65 days RAW, FAT-, and SALT-FREE. ⠀⠀ Contrary to popular and trendy diets, too much fat is not the most optimal thing for one’s body, especially if they’re navigating the world of chronic and mystery illness. ⠀⠀ Sure, types of fats matter. Avocado and coconut and nuts and seeds among other things are GREAT sources of fat—but the LEVELS matter too. ⠀⠀ As @medicalmedium  explains, “The bombardment of a high-fat diet takes time and energy away from the liver performing its other duties, [like disarming and detaining harmful materials,] because it’s constantly in cleanup-in-Aisle-Three-mode.” ⠀⠀ It also requires the liver to produce different amounts and complex compositions of bile, which, although helps you in the moment, is not something you want happening repeatedly in the long-run. ⠀⠀ For this reason, when I do consume fats, I choose them from healthy, plant-based sources (like the ones mentioned above), and keep them under 15% of my diet. ⠀⠀ So why am I not consuming any fat? Because this is the year of Maddie’s Liver. 🥰 ⠀⠀ When I reflected upon what kind of changes I wanted to make this year, I told myself that I wanted to honor my liver, just as it has honored me for my whole life. I wanted to take my healing to the next level, and ease my liver up that much more. ⠀⠀ I also felt inspired following @omumakali ’s journey, as they recently embarked on a raw and fat-free journey as well. ⠀⠀ Featured here is one of my favorite fat-free meals as of late: cucumber noodles with a tomato-date sauce. Those are homegrown cherry tomatoes too. ☺️ ⠀⠀ Have you lowered or even eliminated your fats? If so, how has it gone?

Lets TACO BOUT these tacos cause they are outta this universe 💫🛸 The flavor THO. These tacos are citrusy, spicy, buttery and crunchy 💥 I’ve been on a chickpea kick. They are so versatile! I love it. They are a great source of protein, improve digestion, boost immune system and improve skin health. I have been craving greens like crazy! I usually like using @sietefoods  tortillas, but decided to have lettuce tacos. Ingredients: 1 15oz can chickpeas Cumin Sweet paprika Garlic powder Onion powder Pink salt Romaine lettuce Avocado Cilantro 1/4 lime Salsa from local Mexican restaurant Directions: 1. Take a mesh strainer and rinse your chickpeas for 1-2 minutes. This step is so important! 2. Heat up some avocado oil on a pan. When pan is hot, add chickpeas and seasoning. I like to cook on medium/high heat to crisp up the chickpeas. I love them a little burnt 3. When chickpeas are ready, build your tacos. 4. I added cilantro, avocado, salsa and lime juice. So simple and so good!!

Much love x Pasta with tamari mushrooms 100g pasta of choice 1 clove garlic 1/2 medium onion, chopped 150g mushrooms, chopped 2 tbsp tamari 1/4 cup oat milk 1/2 tsp garlic salt Large handful spinach Boil the pasta according to packaging instructions. Meanwhile, add the garlic, onion and mushrooms to a non-stick frying pan and sauté for around 5 minutes, until the mushrooms cook down. Add the tamari, oat milk and garlic, lower the heat, and stir for a further 2-3 minutes before stirring in the spinach and the pasta. My current favourite treat (next to blobbing almond butter on a date): puffed quinoa squares! These have a nice balance if sweetness from maple syrup or honey, with salty, and crunchy. Simple ingredients, easy to make, and no baking involved so you don’t heat up the kitchen (it’s already hot and humid enough, thank you). I slightly adapt the original recipe from @drjoshaxe  . . 3 cups puffed quinoa (bulk barn) 1 cup almond butter 1/2 cup sunflower butter (I use cashew) 1/2 cup honey (I use maple syrup) 1 tsp cinnamon 1/2 tsp sea salt 3 tbsp coconut oil I also add 1/2 cup shredded coconut . On low heat, melt and combine butters, oil, syrup, salt. Add to bowl of quinoa and coconut. Mix well and press into a pan (9x9 ish works)(I line my pan with a beeswax food wrap so I can easily take it out of the pan once frozen, and also keep it wrapped to stay fresh!) Freeze. Thaw to cut. Keep in fridge or freezer. Me and my awesome client Kelly after one of our weekly strength sessions. 💪🏻 Kelly is a really fun client to work with, she always arrives enthusiastic, makes sure we always hit abs and is genuinely excited to be stronger and develop positive health habits. We focus a lot on glutes and gaining a firm, shapely form along with lots of postural back work as Kelly works at a desk for most of the day. She is very self motivated so one session per week with me helps her feel strong and gives her new ideas (we have just started deadlifts) for when she visits the gym alone. She then compliments our strength sessions with some hot yoga or Pilates over the weekend. Multi-Colored Sweet Potato Fries with Guacamole🍴 🍃For more recipes visit @vegan.raw.food  ⠀ 🌱 1 lb. sweet potatoes, varied colors such as purple and orange, peeled and cut into 1/2-inch thick fry shapes 🌱 1 tbsp olive or avocado oil 🌱 1 tsp garlic powder 🌱 1/2 tsp salt 🌱 1/4 tsp ground black pepper 🌱 1/2 tsp each turmeric and cumin, optional 🌱 Ketchup or Guacamole for dipping ⠀ 🌿 Preheat oven to 375 degrees F. Line a baking sheet with parchment paper. 🌿 Pat cut sweet potatoes dry with paper towels to remove any excess moisture that would prevent the fries from crisping. 🌿 Place prepared sweet potatoes, oil, and spices in a large bowl, and mix until all fries are evenly coated. Spread fries onto the prepared baking sheet, spaced evenly apart so that none are overlapping. 🌿 Bake 35 to 40 minutes, until the fries are crisp and golden. Loaded veggie rice bowl from lunch today was so delish and took 15 min to make and filled me up!!!🌱I pretty much always take the easy way out and use microwaveable rice cause it takes a minute and tastes just as good in my opinion lol! I added some olive oil, lime, cilantro, & salt to the rice once it was done! Then loaded it up with zucchini, carrots, mushrooms, & tomatoes and a bed of arugula! Have a great rest of your day!!🤩

After dinner treat? We love to mix things up from our usual savory toppins ideas. We made cocoa white chocolate rice crispy treats topped with bacon bits. It hit all the flavors ✨

It’s been far too long since I’ve made a visit over there, and I’m sooo glad I made a point to go back. The Butterfly Hempseed Horchata is to die for, and I love that it comes in a glass bottle I can reuse (with a label that peels off flawlessly)! We got the pizza panini and the jackfruit cruchwrap, each only $6, such a deal! They both came with a little side salad with an amazing vegan pesto. I love having an all vegan spot nearby that can appeal to my more health-conscious vegans and to my lovely vegan junk foodies, which even still is barely “junk food”. Two years ago today, I began a 30-day vegan challenge not knowing it would change my mind, my heart, and my life.⁣⁣⁣⁣ ⁣ Last year, I posted about all of the food I ate throughout that year: plant-based burgers, hot dogs, sushi, desserts, and nachos. I was excited about trying new and exciting foods to prove to others: #AnythingYouCanEatICanEatVegan .⁣⁣⁣⁣ ⁣ This year, the food was less important to me—probably because I had no one to share the experience with. This year I’ve felt more alone and isolated from friends and family who I’ve been unable to inspire. I’ve felt frustrated when others turn their noses up to plant-based foods while they consume the flesh of a slaughtered animal. I’ve felt defeated staring at a menu unable to find anything that hasn’t cost an animal its life. I’ve felt angry when someone questions my health when I went vegan for health in the first place.⁣⁣⁣ ⁣ There are no protein deficiencies or cheese cravings to speak of over the past two years. The hard parts have been watching everyone else eat dead animals (and their secretions) without a second thought while I’m thinking of the lives that ended enjoying delicious, vegan food while others refuse to try anything labeled “vegan” getting my bloodwork back twice a year with all parameters in healthy ranges and barely ever getting sick while others say veganism leads to health problems seeing posts demanding the dog meat trade be ended followed by a post of cow/pig/chicken flesh being fried up for dinner.⁣⁣⁣⁣ ⁣ This year, I celebrate alone. I love who I have become and my only regret is not having done it sooner 💚

The first few times Manuel & I went to NYC, we took the subway system everywhere. Now that we’ve got our bikes tuned up, we get to see SO MUCH of the city we had missed by being underground. I had a huge moment of gratitude for this bike while gliding down the Williamsburg Bridge. Even teared up a bit 😅. 8 years later & this is still one of the absolute best investments that I ever made. Also so thankful for cities that accommodate bikers & pedestrians 🙌

I can’t be more excited to pick the first of many of my bell peppers! 🙌🏼 We go through a lot of bell peppers in this family. It’s so fun to just walk out and pick them at the peak of ripeness for free! The flavor is so incredible compared to store bought peppers! My Tower is still going strong for 3 months now! It looks like I’ll be harvesting a bunch of basil again soon, the swiss chard just keeps coming too. There are so many peppers coming! In the fourth picture, can you find the 5 peppers? Look closely, they like to hide. This is my first year growing celery. I love how pretty it grows. Also, this is my first time growing broccoli and it’s going well so far (I think). Just managing the caterpillars and trying to keep them from eating the leaves. But then I found what every gardener wants in their garden! A sweet lady bug!!🐞😍 I’m cheering this little guy on for sure! These fresh peppers and some Swiss chard added to the texture, color and nutrients that compliment this meal perfectly!!
