Vegan spaghetti bolognese 🌱
Yesterday evening I finally discovered how to take a foodie photo of our dinner without everyone a/ rolling their eyes b/ nashing their teeth c/ saying oh for ‘godsake’ (no swear words, this is a family dinner remember 😉) get on with it d/starting anyway (Sonny), laughing (Sonny) and ruining the photo (Sonny) - he’s 18, he doesn’t give a shit about the perfect shot, especially when he’s starving (always).
So I discovered after many stressful photo shoots and cold dinners (mine), it’s best to heat the plates, get the food out and DON’T tell anyone it’s ready until I’ve had a chance to snap away in peace. It’s taken me about 2 years to get to this point (sigh / eye roll). @gemcwade can you relate?!
Anyway, there’s a bit of behind the Insta shot for you... and here’s a bit more ... one of the pre-dinner comments I got was ‘is that real bolognese or is it fake?’ (FFS)
Well, it’s ‘fake’ and I prefer it to the meaty kind these days. My reasons ... why eat a cow if you don’t have to?! I’m totally with @mscaitlinmoran on this. If you can make a dish that is just as tasty, more nutritious and low in saturated fat with soya mince, mushrooms (lots), veggies and herbs, then there’s no need, right? Granted you have to work a little harder to get the flavour right, but even the doubters last night were convinced. Five empty plates says it all. I’m not saying you shouldn’t cook bolognese with beef mince ever again, but you might want to explore the alternatives as they’re really bloody good these days. 🌱
This is a @gizzierskine recipe hack from #slow - her version is really fabulous, but I needed a weekday shortcut so I made a simplified version and it worked really well. So now I guess I should give you the recipe.... 😬 well I’m going to have to go an write it down first, or may be even make it again! Anyone interested?
