Just made some keto tomato soup 🍲🍅
I always order tomato soup and croutons instead of a starter at restaurants BUT we not about that flour roux life anymore. So I figured let me try tweaking a regular tomato soup recipe, how hard could it be? It certainly tastes very creamy, texture is pretty amazing. The cilantro in the end and the spices used, give it more of a shorba flavour (no complaints there)

Recipe: dice 1 onions and 3-4 garlic cloves in 5 tbsp of coconut/olive oil, allow them to cook fully and turn brown, add in 5 tomatoes, diced.
Let the juices from tomatoes release and reduce then add chilli powder, basil and parsley powder. After 20 minutes add in 1-2 cups of water or broth (I've used pork broth)
Let it cook for another 15-20 minutes, add salt and pepper to taste.
Blitz in the blender for a smooth texture and sieve the pulp out. Add some heavy cream/ fresh cream to your serving bowl and add the soup. Top with cilantro or any fresh herbs.
