These have to be my favourite whip-together dessert! Vegan Peanut Butter Cups✨ this time I switched it up with white chocolate & freeze dried raspberries, yummm! Here’s the recipe♥️ White Chocolate Peanut Butter Cups makes 5 150g vegan white chocolate (or any dairy free choc) 1/4 cup peanut butter (or any nut butter) 1 tbsp maple syrup tiny pinch of salt In a bowl mix the peanut butter and maple syrup together vigorously, until the peanut butter firms up. Form into little patties a bit smaller than your moulds. Place on a tray lined with baking paper and pop them into the freezer to firm up. Meanwhile, melt the chocolate and place a spoonful of chocolate into the bottom of each mould. Place in the freezer until set. Once that's set, place the peanut butter patty in the centre. Fill the moulds with chocolate. Top with a sprinkle of freeze dried raspberries (optional). Place in the fridge or freezer until set. another day another SIMPLE and NOURISHING dinner ✨ and thats how meals should be most of the time! SIMPLE . sometimes it’s easy to get carried away making extravagant recipes (especially as a food blogger wanting everything to look as exciting as possible🤩) BUT our bodies crave SIMPLICITY, our digestive systems don’t like being inundated with 30 ingredient meals - do you know how straining that is on our digestive systems?! So here i am to remind you that it is MORE than ok to have simpler meals and to appreciate beautiful fruits and vegetables and how amazing they taste simply paired with spices - simple whole foods is what our bodies thrive of so lets give them more of that🙌🏼🤤 and hey for a uncomplicated bowl of veggies and quinoa not only does this taste amazing but it looks pretty damn good too! lets put our bodies first over the most ‘insta-worthy’ bowl with 20+ toppings because while that is great thats not the everyday standard meal for most people! . IN THIS BOWL 🌱- is just quinoa cooked in @greenestreetjuice  vegan broth with steamed veggies plus a dash of @niulife  coconut aminos - THATS IT and it’s honestly one of my favourite meals - takes 5 minutes to make and has so much simple flavour 🤤 of course you could add in garlic and ginger and even some sautéed onions in when cooking the quinoa 🙌🏼 but when your strapped for time it’s so nice to be able to throw something together without thinking✨

Nut free + Dairy free Raspberry Tahini Overnight Oats Sweetened with a hint of natural mountain honey. It’s anti inflammatory and antiseptic. Swap it out with maple, rice or date syrup if you don’t eat 🍯 Serves 2 1 c fine oats 1 tbsp each flax, white and black chia seeds 4 tbsp amaranth or quinoa pops 2 tbsp buckwheat groats 2 tbsp sesame seeds 1-2 tbsp natural honey or sweetener of choice 2 tbsp natural tahini Pinch of salt 2 c almond mylk 1/2 - 1 c frozen raspberries Stir and let sit for at least 1 hr, preferably over night. Here is my 4th 8x8 bench press session in the last 12 weeks. The goal was to increase the weight each session, but it looks like I moved up a little to fast. Three weeks ago, I performed this 8x8 with 57.5 kg (126.5). I tried to move up to 60kg this week, but after 2 sets I wasn't able to do any more. So I dropped back down to 57.5kg for the remaining sets. My jumps in between sessions were too large, and in hindsight I should have taken it slower. Ah well, not the end of the world. Caramelised onion Homous on Sourdough Toast with Garlic & Parsley Mushrooms 2 garlic cloves, minced or finely grated 160g Chesnut Mushrooms or closed cup, sliced 1/2 tsp of dried parsley salt & pepper, to taste 2 slices toast 2 tbsp hummus, (i used caramelised onion hummus) Spray olive oil for frying Spray a frying pan with a few sprays of olive oil, heat up on a medium heat setting. Once the pan in hot, saute the garlic in the pan for around 3 minutes until fragrant Stir the mushrooms into the garlic and saute for around 5 minutes until the mushrooms are almost soft. Stir in the dried parsley, salt and pepper and continue to cook the mushrooms for another 3 minutes until they have browned and have become soft. Meanwhile, Once you have toasted your bread of choice, spread each slice with hummus. In a bowl combine chia seeds and almond milk. Whisk together with a fork, then wait a couple minutes and whisk again (this will stop the chia seeds from clumping). Add maple syrup and whisk again to combine. 2. Cover and transfer to fridge. Allow chia seeds to absorb liquid mixture for at least 10 minutes, or until thick pudding consistency. Summer is my favourite season.🌻 I get to spend most of the time outdoor rather than indoors. I begin my day with a long walk on the beach🏖️. The only qualm I have is when the hot sun sucks my energy like a blood thirsty vampire. This is when I crave for something soothing and refreshing.🍹🍉 Today’s lunch is a courtesy of quinoa, watermelon and mint salad. This recipe is not only mouth watering but also thirst quenching!💚🍉🌱 . Ingredients: 1cup dry Quinoa 2cups diced watermelon 🍉 1cup spinach 1/2 cup green peas 1/2 cup fresh mint leaves 2tsp lemon juice 🍋 1tsp black salt 1tsp chopped garlic 2cups water . Method: Rinse the Quinoa thoroughly.Add one part Quinoa with two parts water to a saucepan. Add chopped garlic , olive oil and spinach. Stir and combine. Simmer for 15-20 mints till the water is completely absorbed. Once done, allow Quinoa to cool. Mix all the remaining salad ingredients and gently toss to combine. Chill it for an hour and serve🍉🍛. . 🧡🥕TORTA DE ZANAHORIA SIN TACC🥕🧡 . Buen día!! como andan? hoy les dejo la receta de esta torta de zanahoria sin gluten. Siempre amé la carrot cake, es una de mis tortas favoritas, es perfecta para la merienda o para postre. . Esta receta es super liviana ya que no lleva aceite ni margarina ni nada, entonces no te deja super pesado después de comerla. Esta vez la hice con harinas sin gluten, pero pueden hacerla con cualquier harina, siempre queda bien 😍 . Por arriba también pueden ponerle un frosting de castañas como el del flatcake de zuchini de unos posts anteriores 😊 queda buenisimo! . 🥕INGREDIENTES: -1 taza y 1/2 de zanahoria rallada finita (una zanahoria mediana aprox) -3/4 taza de harina de almendras (la hacen procesando las almendras hasta que quede un polvo) -3/4 taza de harina de arroz integral -1/2 taza de azucar mascavo o lo que elijan para endulzar -1 cucharadita y 1/2 de polvo de hornear -pizca de sal -1 cucharadita de canela en polvo -1/2 cucharadita de garam masala (opcional, es un mix de especias, tiene cardamomo, nuez moscada, jengibre en polvo y más) -3 huevos de lino o chia (dejar reposando 3 cucharadas de semillas de lino o chia molidas con 9 cucharadas de agua) -1/2 taza de leche vegetal o agua -1 cucharada de jugo de limón . 🥕PROCEDIMIENTO: -Pre calentar el horno a 180°C -Tamizar todos los ingredientes secos en un bowl -Agregar el jugo de limon, la leche o agua y los huevos de lino. Mezclar y agregar la zanahoria -Le pueden poner pasas y/o nueces o almendras troceadas. -Transferir la mezcla a un molde previamente aceitado y por arriba espolvorearle azucar mascavo, coco rallado y canela (opcional) -Llevar al horno por 30 minutos aproximadamente o hasta que esté dorada y al introducir un cuchillo salga limpio. . Queda MUY rica, les recomiendo que la prueben, además es muy saludable 😊 Que tengan un hermoso día 🧡🌻☀️
