Stir Fry Mixed Vegetables and Potato Patties (Serves 4)
1 teaspoon sesame oil
4 cloves garlic, peeled and minced
8 spring onion leaves chopped
2 bunches broccolini, stems removed
8 cup mushrooms, halved
4 bunches of pak choy, edge of stems removed
1 red capsicum, sliced
1 tablespoon tamari
1 tablespoon chilli sauce
4 boiled potatoes
1 brown onion, peeled and diced
1 cup mixed frozen peas, corn, and carrot
1 tablespoon tahini
1 tablespoon flaxseed
4 spring onions, chopped
1/2 cup nutritional yeast
A few dashes of pepper
Cold-pressed extra-virgin olive oil for brushing (1 teaspoon)
For A) heat oil and cook garlic until fragrant. Add all vegetables and sauces and cook until broccolini turns dark green.
For B) mash all ingredients together (except oil). Form 8 patties by hand. Brush with oil and transfer to oven for 30 minutes @ 190 C, turning at halfway point.
Serve with rice and the stir fry vegetables.
